Oats and Berry Delight

Nothing better than a warm bowl of oats with berries for breakfast

Half a cup of Wheat free oats with 1 cup water and a dash of salt – simmer in a pot on the stove till water is gone

Add in some coconut milk, cinnamon, chia seeds, goji berries, strawberries and blueberries and you are set for the day!

Poached Egg Stack

One of my most favourite breakfasts of all time

Fried Tomato, Sweet Potato, Spinach, haloumi and poached eggs

Fry the haloumi and sliced tomato for a minute or two in Ghee (clarified butter)                                                     Boil some diced spinach or kale up for a few minutes and toss with some garlic and salt     

Slice the sweet potato and coat with coconut oil, bake in the oven till brown                                        

Poach the eggs in some water with white spirit vinegar for a few minutes minutes                                                   Build you stack and sprinkle with some fresh herbs and Cayenne Pepper and you will have yourself a feast fit for a king

Tomatoe Sauce

Got this recipe from a friend, it’s healthy with a hint of fire

2 punnets of Vine tomatoes cut in half                                                                                                        

1 large onion cut into chunks                                                                                                             

3 garlic cloves chopped                                                                                                                            2 fresh chilli’s chopped                                                                                                                              Add all ingredients into a flat dish and add Balsamic vinegar till everything is half covered                                        Bake at 180 degrees for about 30 - 45 mins                                                                                                    Let it cool off, then add juice of half a lemon, 2 tablespoons olive oil, salt and pepper and blend till smooth

Yummy sauce that can be added to just about any meal or dish

Basil Pesto

Basil Pesto without nuts

As I have a nut Allergy but love Pesto I decided that I would have to make my own

Equal quantities of Baby spinach, watercress, basil and Parsley, blended together                                             

You could also add some seeds to replace the nuts if you wanted to (sunflower, sesame etc)                                      Add some olive oil, salt & pepper, dash of lemon juice and garlic

Great for pasta dishes, mince, stews or even crackers – I add it into just about everything

Spätzle

Spätzle or homemade German Pasta

This is always a hit especially with the kids but you would need a Spätzle machine to make them (specialised Kitchen stores will stock them)

1 kg flour, dash of alt and 12 eggs beaten a wood spoon till smooth                                                                     Push through the Spätzle machine into a pot of boiling water        

Rinse machine in hot water so the holes don’t block up                                                                             

Wait for the Spätzle to boil up, remove from water and leave to cool off

They can be heated up in the microwave or fried up a few days later in a pan with some Ghee and an egg or frozen for later use.

Mince Delight

Beef mince is always a great thing to have in the freezer for the night you don’t feel like cooking and it can be eaten with just about anything even on toast

I large onion chopped up                                                            

3 cloves chopped garlic                                                                                                                     

500 g extra lean beef mince                                                                                                               

Fry up Onion and garlic in some Ghee with some cayenne pepper, once golden add the mince and fry for a few minutes. Add 150 ml of red wine, beef stock and water, half a cup of my tomato sauce (depending on taste) salt & pepper and let simmer for about half an hour.  I sometimes add in chopped carrots and peas just depends what mood I’m in.  Just before it’s done add in a tablespoon of my Basil Pesto and have a taste to see what other spices are needed.

My favourite addition to any meal is Maggi so if it’s lacking in a bit of Umph that is what I would add

PS: Homegrown Ballito stocks the most amazing Stock if you don’t want to make your own or you can just buy the Beef stock cubes and add some water.
